01 - Place ground turkey in a large bowl. Add all spices, seasonings, and fresh parsley. Mix gently until just combined, taking care not to over-mix which can toughen the meat.
02 - Divide the mixture into 8 equal portions. Form each portion into a patty shape, or leave the mixture loose if using in other recipes.
03 - Heat olive oil in a skillet over medium heat. Add the patties and cook for 4-5 minutes per side until browned and the internal temperature reaches 165°F.
04 - Serve warm as breakfast patties, in sandwiches, or crumble into scrambled eggs or pasta dishes.

# Expert Advice:

01 -
  • Takes about five minutes of active work but makes your kitchen smell like a breakfast spot
  • Way cheaper than store bought sausage and you control exactly what goes into it
02 -
  • Turkey sausage sticks more than pork sausage, so do not flip too early or the patties will fall apart
  • Thigh meat makes a huge difference in texture, so choose that over breast if you can find it
03 -
  • Let the mixture rest in the fridge for 30 minutes before shaping if you have time, it helps the patties hold together better
  • Use a kitchen scale to make evenly sized patties so they all cook at the same rate
